Ingredients

  • ½ cup (125 ml) margarine
  • 1 cup (250 ml) sugar
  • 2 eggs
  • 2 cups (500 ml) flour
  • 4 bananas, very ripe
  • 1 teaspoon (5 ml) baking soda
  • ½ tsp baking powder

Directions

Preheat oven to 350° F.

Cream butter and sugar.

Add eggs in 1 at a time.

Mix until smooth.

Add bananas - mix well.

In separate bowl, add all dry ingredients together then blend well with the wet batter.

Bake in greased and floured loaf pan for 1 hour or until done (knife comes out clean). optional - 1 cup walnuts chopped or 1 cup chocolate chips or 1 cup diced strawberries makes 12 larger muffins - bake about 25 minutes
